BBQ ChickenNothing says down-home cookin’ like barbecued chicken. While heating up the “barbie” and grilling outdoors is a great way to prepare chicken, here’s an easy, oven-baked version of a perennial favorite that you can prepare indoors in case of bad weather or at any time of the year. Best of all, it’s finger-lickin’ good.

Easy Baked BBQ Chicken

Serves: 4

Olive oil spray

1 pound chicken breast, skinless, boneless, cut into 4 pieces

1 medium onion, thinly sliced

1 medium green pepper, chopped

¾ cup barbecue sauce

Preheat oven to 350 degrees. Spray bottom of an 8 x 8 inch baking pan with olive oil spray. Place chicken in prepared dish. Sprinkle onions and green peppers over chicken, and pour barbecue sauce evenly over top. Cover and bake for 30-40 minutes. Remove cover and continue baking 10 minutes, or until chicken is firm and juices run clear.
