Boost Your Health with My Southern Sunrise Salad

I can’t count how many people have told me they buy lettuce or other vegetables only to have them go bad in the fridge. That’s because salads are often seen as boring and bland. The trick to eating more veggies is to change it up.

My Southern Sunrise Salad recipe gives you fiber-rich, leafy greens along with heart-healthy ingredients like olive oil, almonds, walnuts and more. Plus, it’s easy to make. You can even put the chicken on the grill, so you don’t need to heat up the kitchen.

Southern Sunrise Salad

  • 1/8 cup extra virgin olive oil
  • 1/4 cup raspberry vinegar
  • 1/8 cup water
  • 5 dashes hot sauce
  • pepper to taste
  • 1 teaspoon ground cinnamon
  • 1 head Boston lettuce, chopped
  • 1 head red leaf lettuce, chopped
  • 1/4 cup almonds, chopped
  • 1/4 cup walnuts, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cups chicken, skinless, cooked, and diced

Mix oil, vinegar, water, hot sauce, pepper, and cinnamon in a small bowls and whisk until emulsified. Place lettuce in a large salad bowl and toss with dressing. Mix well. Add almonds, walnuts, feta, and chicken and mix lightly. Serve immediately.

Makes 4 servings.

Per serving: Calories 404; Fat 33 g; Sodium 293 mg; Carbs 6 g; Fiber 2 g; Protein 22 g.
