Diabetic Diet: Recipe for Garlicky Spinach

Spinach is packed with iron, fiber, and vitamin C, while garlic contains sulfur compounds that have numerous health benefits, including reducing cholesterol and blood pressure, fighting infections, and inhibiting the growth of some cancer cells. Recipe for Garlicky Spinach
Serves 4

8 cups (1 large bunch) fresh spinach
1 teaspoon extra-virgin olive oil
2 cloves garlic, peeled and minced

Wash spinach well and remove tough stems.

In a large non-stick skillet, heat olive oil over medium-high heat. Add minced garlic and cook, stirring for 1 minute.

Add spinach to the skillet and cook, stirring constantly and pushing uncooked spinach toward the bottom of the skillet. Cook until all spinach has wilted, 3-4 minutes.

Enjoy your garlicky spinach!
