Diabetic Diet: Recipe for Lemon-Mustard Chicken Breasts

This recipe for lemon-mustard chicken breasts is so simple and delicious! Make the marinade the night before, and you can have this entrée on the table in less than 30 minutes. Recipe for Lemon-Mustard Chicken Breasts
4 servings

2 cloves garlic, peeled and minced
1/3 cup lemon juice
1/3 cup Dijon mustard
1 tablespoon extra-virgin olive oil
¼ teaspoon salt substitute
4 (4-ounce) skinless, boneless chicken breast halves

Mix garlic, lemon juice, mustard, olive oil, and salt in a large, shallow bowl.

Place chicken in marinade, turn to coat both sides, and refrigerate for at least two hours or overnight. Can also place chicken and marinade in a plastic bag, press out air, seal tightly, and marinate in refrigerator.

Preheat a grill or broiler to high and place the grill or broiler pan 3-4 inches from heat.

Baste chicken with marinade and cook for 7-9 minutes. Turn, baste other side, and continue cooking for another 7-9 minutes, until done. (Juices will run clear when pricked with a fork.)
