Recipe for Orange County Special Salad
Serves 4 (8 cups)
1 1/2 tablespoons extra-virgin olive oil
1 1/2 tablespoons red wine vinegar or lemon juice
1 teaspoon finely chopped parsley
1/4 teaspoon salt or salt substitute
1/4 teaspoon freshly ground black pepper
6 cups lettuce, preferably mixed baby greens
1/2 small red onion, peeled and very thinly sliced
2 teaspoons freshly chopped parsley, for garnish
Make salad dressing by mixing olive oil, vinegar, parsley, salt, and pepper in a small bowl.
Wash lettuce and tear into bite-sized pieces. Divide evenly among four small serving plates or salad bowls.
Peel oranges, carefully cut away white pith, and cut into 1/4-inch slices. Arrange slices from half an orange on each plate of lettuce.
Divide onion slices and arrange on orange slices.
Spoon salad dressing over salads. Garnish with parsley.
