Diabetic Diet: Recipe for Stir-Fried Asparagus

Asparagus, particularly stir-fried asparagus, is one of my favorite spring vegetables. Pair these spears with chicken or fish, and you’ll have an easy, healthy, and tasty meal that won’t spike your blood sugar levels. Recipe for Stir-Fried Asparagusrecipes for diabetes: stir-fried asparagus
Serves 4

1 pound asparagus
2 teaspoons hoisin sauce (optional)
2 teaspoons low-sodium soy sauce
2 tablespoons water
Dash red pepper flakes
1 teaspoon hazelnut oil (or almond or extra-virgin olive oil)
1 medium onion, sliced lengthwise into ½-inch wedges

Snap tough ends off of asparagus. Cut spears into 1-inch pieces.

Combine hoisin sauce, soy sauce, water, and red pepper flakes in a small bowl.

Heat oil in a large non-stick skillet or wok over medium heat. Add onion slices and stir-fry for two minutes. Add asparagus to the skillet and stir-fry for two minutes.

Pour sauce into the skillet and cook three to four minutes, until asparagus is tender, yet crisp.

Enjoy your stir-fried asparagus!
