Recipe for Grilled Vegetables
1 pound raw eggplant or 3 pounds raw zucchini
1 tablespoon extra-virgin olive oil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Preheat the broiler or prepare charcoal grill. Wash and pat the vegetables dry with paper towels. Do not peel vegetables. Slice vegetables and lightly coat both sides of each slice with olive oil. Sprinkle one side of vegetable slices with oregano and thyme. Broil or grill the vegetable slices 2-4 minutes on each side. Serve hot or at room temperature.
