Beans, beans, the musical fruit; the more you eat … the lower your risk of developing diabetes.

Chinese and U. S. researchers evaluated the dietary habits of more than 64,000 middle-aged women for four and a half years and discovered that those who ate the most beans and other legumes were 38 percent less likely to develop diabetes—and the women who regularly ate soybeans slashed their risk almost in half.

Unlike the starches in breads and potatoes, which are quickly digested and cause spikes in blood sugar, legumes are slowly broken down for gradual blood sugar release. Fiber-rich legumes also keep you regular, lower cholesterol and are a great source of potassium.
