My Southern Sunrise Salad recipe gives you fiber-rich, leafy greens along with heart-healthy ingredients like olive oil, almonds, walnuts and more. Plus, this healthy salad recipe is easy to make. You can even put the chicken on the grill, so you don’t need to heat up the kitchen.
Healthy Salad Recipe: Southern Sunrise Salad
- 1/8 cup extra virgin olive oil
- 1/4 cup raspberry vinegar
- 1/8 cup water
- 5 dashes hot sauce
- Pepper to taste
- 1 teaspoon ground cinnamon
- 1 head Boston lettuce, chopped
- 1 head red leaf lettuce, chopped
- 1/4 cup almonds, chopped
- 1/4 cup walnuts, chopped
- 1/2 cup feta cheese, crumbled
- 2 cups chicken, skinless, cooked, and diced
Mix oil, vinegar, water, hot sauce, pepper and cinnamon in a small bowl, and whisk until emulsified. Place lettuce in a large salad bowl and toss with dressing. Mix well. Add almonds, walnuts, feta and chicken, and mix lightly. Serve immediately.
