Lemon-Mustard Chicken Breasts
Makes 4 servings
2 cloves garlic, peeled and minced
1/3 cup lemon juice
1/3 cup Dijon mustard
1 tablespoon extra-virgin olive oil
¼ teaspoon salt substitute
4 (4-ounce) skinless, boneless chicken breast halves
Mix garlic, lemon juice, mustard, olive oil, and salt in a large, shallow bowl.
Place chicken in marinade, turn to coat both sides, and refrigerate for at least two hours or overnight. Can also place chicken and marinade in a plastic bag, press out air, seal tightly, and marinate in refrigerator.
Preheat a grill or broiler to high and place the grill or broiler pan 3 to 4 inches from heat.
Baste chicken with marinade and cook for 7 to 9 minutes. Turn, baste other side, and continue cooking for another 7 to 9 minutes, until done. (Juices will run clear when pricked with a fork.)
