Recipes for Diabetes: Turkey Chili

As the weather gets colder, nothing says comfort like a big bowl of steaming chili. Enjoy a bowlful for dinner or serve a scoop over your favorite mixed greens for an easy Mexican salad at lunchtime. This tasty chili is a perfect recipe for people living with diabetes.

Turkey Chili
Serves 4

1 pound lean ground turkey
1 medium yellow onion, chopped
1 green bell pepper, chopped
1 tablespoon extra-virgin olive oil
2 cups water
1 (16-ounce) can tomatoes, chopped
2 tablespoons tomato puree
2 tablespoons vegetable seasoning
½ teaspoon red chilis (or to taste—very hot)
1-2 tablespoons chili powder (to taste)
2 green onions, chopped

Sauté the ground turkey, onion, and green pepper in olive oil in a large pot over medium heat. Add the remaining ingredients, except the green onions, to the pot and simmer until the flavors are thoroughly blended, at least 1 hour. Add more water as needed. Garnish with green onions.
