Reversing Type 2 Diabetes: Baked Salmon Dijon

Diabetic Recipe for Dinner: Baked Salmon Dijon

Makes 4 servings

Olive oil spray
2 teaspoons extra-virgin olive oil
1 ½ tablespoons Dijon mustard
2 tablespoons lemon juice
1 ½ tablespoons chopped chives (fresh or freeze-dried) or parsley
1 teaspoon grated lemon rind
¼ teaspoon salt or salt substitute
1/8 teaspoon freshly ground black pepper
1 pound salmon fillet, cut into 4-ounce fillets

Preheat oven to 400°F. Spray a large baking dish with olive oil spray.

Combine olive oil, mustard, lemon juice, chives, lemon peel, salt and pepper, and stir until well blended.

Rub oil-mustard mixture over both sides of salmon. Place in baking dish (skin side down if not skinned). Bake for 12 to 15 minutes, depending on thickness.

Transfer to serving plates and spoon pan juices over fillets.
