Whitaker Wellness Mashed "Potatoes"

Almost as good as the real thing

Serves 4

  • 8 cups cauliflower florets
  • 1/3 cup half-and-half
  • 2 tablespoon butter (organic preferred)
  • 1 clove garlic, peeled and minced
  • ¼ teaspoon salt
  • 1/8 teaspoon ground black pepper

Cook cauliflower in steamer (or in a microwave in a covered dish with 3 tablespoons water) until tender. Do not overcook. Drain well.

Combine cauliflower, half-and-half, butter, garlic, and seasonings in a food processor. Process, turning off and on, until smooth.

Per serving: calories 128, protein 5 g, carbohydrates 11 g, fiber 5 g, fat 8 g, sodium 260 mg
